If I’m planning to record my matches during league. Should I ask my opponents permission?

Absolutely as they have a right to choose if they want to be recorded or not.

Definitely ask. In some states you can get into serious legal issues by taping/recording other people without consent. Video in a public place is usually ok whereas audio requires consent in various locales.
