I own a big Gandy table and looking to convert it to play similar to a diamond, how easy/difficult is this and estimated cost.

Your location is the biggest problem, can't drive to get there.
Is it something worth doing time and money wise ,seeing than a used diamond is so hard to find.
buy a new diamond and be happy. trying to make something into a Diamond will never work.... Buying a used Diamond is almost as much as a new Blue Label. The Blue label plays right and has the leveling system built into it and is worth every penny. Its a one time purchase.
