Best steak house I've ever eaten at....Meridys in Russel KS. 1220 S Fossil St, Russell, KS 67665.

Eat there every time I rolled thru KS from CO.

Black Angus Beef, either a 16oz, a 24 oz, or if you call ahead 3 days, a 42 oz Ribeye.

They are all about 2'' thick. The Lunch Salad bar is Homemade, with fried chicken, beef tips/noodles and every item is hand made.

Dinner time, a completely different Salad bar.

Around Mile Marker #186 if I remember correctly.
Dinner at 5 pm and the place is 20% seated at 4:45 waiting on the food.

The best steaks I ever had were aged at a place Franks Bar and Grill.
Frank was a butcher that moved form Brooklyn to Upstate NY in 1945.
He hung is own sides of beef. Aged them perfectly.
He used to serve me 30oz porterhouses.
Thus far no steak that I have had at any other restaurant has matched it.

The only place that has come close is Schlesinger's Steak House in New Windsor NY.

He also rendered his own beef fat and had the best steak fries I have ever had.

That lasted until the health department finally caught him. Bastards made him switch to store bought.
They were never the same.

Great memories of fine steak and beverages.

I stopped eating steak at restaurants quite awhile back. Nobody does it better than me. No, I don't think I have any super duper way of doing it. My way is v basic.

Now I haven't been to really nice restaurants like Ruth Chris. However, this last summer my brother took me to Outback and I got their usual special. Pathetic, dry and undercooked, that takes a special kitchen. Little flavor, took half of it home and gave it to the dog.


The rail is your best friend.

I would consider myself at least somewhat of a foodie, for example I have been to Noma & El Celler de can Roca aswell as quite a few other multi-star restaurants.

The best steak (that I know of obviously) by a mile is served in El Gaucho in Cologne, they call it the Gran Bife de Lomo, it is 15 ounces and I prefer it medium rare. To be honest the rest of the menu like the sides, starters and deserts are ok but nothing special. The steaks however, my goodness.

I have also had BMS 10+ Wagyu a few times and while also extremely good I would not want to eat it every week, it's really more of a delicacy you want to enjoy once or twice a year.

i like a good prime ribeye, Salted and Pepper, reverse seared to a perfect medium rare, then tented in foil to rest 5 - 10 minutes with butter.

For extra flavor on the steak I "dry age" them with Koji for a day or two. That really gives them a boost in flavor.

Yes, esp for really thick steaks. I found you really have to extra season the steak though. I actually like to do a salt brine for an hour before I prep it for its water bath.
