The V and the IV have the rubber pocket edge recessed down level with the rail.
Both also have built-in leveling posts for the slate.

The V has a slightly better frame design than the IV and the best of all of the GC's.
The GCIV design engineers had a brain fart when they made the long side supports stop short and butted the end supports against them to get the total length.
This lead to the infamous GCIV End Sag Problem.
The V corrected that by having the side supports go the full length and then have the end supports between the side supports.
BTW - RKC has a great fix for the GCIV End Sag Problem. Inexpensive too.

The V has a different skirt design then the IV. I like the IV better.
The pocket castings got a design upgrade on the V. I do like them.

I'm not sure of other changes.
The AzB Rat Pack will add to this I'm sure.

Shop around for a good price if you are buying new.
Hard to find a IV or V used.
They are out there. I got mine for $1,200. But that's a rare price. Table was never in a commercial setting.
