I'm in Vegas about 4 to 5 times a year. Generally I'm the "Big Hotel" guy and spend a ton on big meals etc. From time to time I come down alone for an event (Mosconi, US Open 10 ball or One Pocket at Griff's etc) and then go the more frugal route. You can still stay on the strip on the cheaper side. Places like the Start are still reasonable, clean and close enough to the action. If you look for a deal you can still do one of the big hotel on a off peak week. Lots of places off Strip for meals. Hell the food at Griff's for example is good value.

Market forces drive pricing. This week I had $60.00 breakfast with the wife watching the Bellagio fountains from an outdoor "Parisian" hotel. Great food and super experience. If I wanted a $25.00 check then there is always Denny's down the street. One of my bosses said it best...if you are crying about the cost of a Rolex...you are not their core market.
