The pivot is where the cue doesn’t move.
I believe that would be the pivot POINT, which since it doesnt move is not actually a pivot, rather all motion on either side of that point would actually be part of the pivot. Am I wrong on this?
I don't think these terms are that carefully defined. My point was that when you end up with the cue angled across the "shot line" to apply side spin, the place where it crosses the shot line is its "effective pivot point" for that shot, whether or not you actually pivot the cue to get there.

I know what I do shouldn’t work, but it does for me. I set up straight along my shot line. Then I move my bridge hand to left/right to apply the amount of sidespin I want. (Front hand english?) I must be making subconcious compensations, but this is what gives me most consistent results. Whenever I’ve tried using back hand english the stroke would feel very awkward and inconsistent.

Yes, that's what that technique is called. But it rarely works as advertised because the cue's pivot point is never as far back as the back hand (where you're "pivoting") - so, as you speculate, you're making subconscious adjustments "by feel" with your back hand to get the exact squirt correction needed for each shot.
