Cue taper

Do alot of you assemble your cue without a taper and then taper the whole butt as a whole or do you taper your parts down gradually before putting them together?

Taper the parts. Sometimes buttsleeves will get put on un-tapered, but forearms and handles are always tapered.

I do many turns on them before assembly, so I've mostly always tapered mine, I have seen pictures of people going the other way though.

I do both. Once I turn the wood round, I cut off the bottom 4 inch for the butt collar and from then on I'll make tapered passes but the parts are still well oversize when the forearm and handle are connected and from then on the cue are turned together of coarse.
