Expo, Why single elimination?

I guess there must be something I don't understand. So could someone fill me in? At first I thought it was to save time. I was thinking it was two races then a tie breaker game. I'm now reading on the web site that it is "best 2 out of 3 sets. That would mean that in at least some cases it would take 3 sets to eliminate a person. In double elimination it only takes 2 sets to eliminate a person. So how would "best 2 out of 3 sets" take less time?

I would so much like to compete in this event but have a firm rule that I will not break. I don't compete in tournaments that are not at least double elimination. Why? Because I'm not good enough to win (yet). Thus I can get a tough draw and be out. I want to have two chances for my money and two chances with the same tough draw doesn't count.
