I worked in Boston for years, set up several pool rooms there including FELT on Washington.

You really need to state what you have before anyone can quote it properly.

I have a 8' Kasson, 3 piece 1" Italian slate w/ leather pockets. I don't think I can afford simionis cloth, but something mid range in price.

You can't afford to put down crap cloth. Simonis should cost you about $185 for your table.

If you can't afford it yet, wait a couple of weeks or whatever so that it's easier.
Get Simonis, you'll appreciate it later.
Unless you only play on Mercury or something along those lines around your tournament areas, then go with what you are getting on anyway, so that you can have the same type of playing conditions to practice on at home.
Then get the best around to do the work, it's worth your time and money to have it done correctly the first time, so you don't have to worry about any problems coming up.
And make sure they don't use a carpenter's level.;)
