repeatability

What is acceptable repeatability for a cnc in order to cut inlays and pockets?

The simple answer is whatever the eye will allow. Could be .001 or could be .010. Be careful of advertised repeatability as they've created unrealistic expectations. I think .003 would be decent enough to live with as long as it wasn't compound or in the form of backlash.

I would agree with Jake. Question is how do you measure that? Backlash is easy to measure at a slow speed. There are other factors as well. If you are using a stepper system there can be lost steps as well which can not be recovered easily and part or pocket could be spoiled.
