I bought a bunch of the interlocking foam pads for workshops at Harbor Freight. You can buy as many as you need, as they come in packs of 4 I think. Mine are 2 units wide all around the 9ft table. Works great. And comfy. You can use "carpet" tape (double-sided) to keep them in place once...

If I were going to tackle this... Id buy a Diamond molded plastic rack. Flip it over and fill the void with epoxy, and band saw the back end off. Epoxy should help the rigidity of only being 2 sided. :) Cheap and effective.
