Best way to handle these dings in a GC3 rail?

Give Mark Gregory a call. The guy works wonders with commercial Brunswick rails. Who knows he might be able to redo those in some gorgeous Bolivian Rosewood veneer.

that WILL cost you some serious $$. no big deal, just leave it.
 
Just leave it. fixing it requires a boatload of work. plus finding the correct formica is near impossible.
Impossible. Formica Elegant Rosewood 6211; it’s discontinued. Jerimy Chambers has some cut for rails but he uses it for the rails he makes. OP can reach out to him about new rails but I’m not sure how Jerimy’s rails play.
 
To reveneer it wouldn't be worth it, but if you are handy, you could just take some satin, or semigloss poly with a small artist paint brush and build up a few coats on the chips along the rail edges.
The dent in the rail, tape around it and fill. Probably some colored wood putty or something similar. You can close match the color by mixing stain with it and letting it dry on samples first. You can fine tune color by mixing stains.
Better to have a slightly darker patch vs lighter. You can paint in fine black streaks to blend in. Put some clear over this also.
Will it be perfect, no, but if you are carefull and take your time you could end up with a reasonable result. The hard part is getting the tone right on the patch. Thats why it usually takes multiple stains, you could be lucky though.
If you don't feel comfortable doing something like this, it would be better to just leave it as is.
