double elimination tournament question

Hi
I am going to be running a double elimination competition here very soon.
I have downloaded two different charts and i have a question.

Does the winner of the loosers side have to beat the winner of the winners side twice, is it optional ?

there are a couple of different options
- winner of b side has to beat winner of a side twice
- winner of b side plays winner of a side in 1 long race
- winner of a side takes 1st, winner of b side takes 2nd (not true double elim)
...

The old 'official' way is yes, but many tournaments
have shorten it down to 1 race, sometimes for the
sake of time, usually a longer race.
For example, in a normal race to 7 tournament, the
final set might be 1 set racing to 9.
Personally, I still like the old way because it is completely
fair to all players. I just don't think it is fair to the
player in the hotseat to lose 1 final set and get 2nd
with only 1 loss.
