It's just another light colored wood, an alternative to maple. There shouldn't be much, if any, real difference in playability. More than anything, folks use what is available to them. Europe has hornbeam. We have maple. If anything, hornbeam may be slightly stiffer, but that is really dependent on the pieces of wood tested. Maple has a broad spectrum of hardness and stiffness, as does hornbeam. It really does depend on the individual piece.
