What is the best way to remove a 3/8-11 joint pin without damaging the cue. I'm afraid that if I just grip it with pliers and try to break the glue loose I will split the wood.

Heat is the key
You need to apply heat to break the glue's bond. There have been a number of threads on this topic. Here's one that I found.
