Just wondering approximately how many 1.25" 13.25mm ferrules can you get out of a cue ball? I know you will have to account for thickness of cutting tool. Also, would it make a difference if it was ivory? 5 possibly?

Probably 5 out of a billiard/Carom ball yes but you'll have quality issues in the center depending on the severity of the nerve.

Pool cue ball expect 4

Also why do you need 1.25" ?
Well, I guess it doesnt have to be but long as its no shorter than 1". I figured out through trying to do some math that about 1.5" square fits inside a 2.25" diameter cueball.

And as long as the ball is perfectly round without cracks or flaws, you can get that square out. Natural materials commonly have flaws, especially used cueballs that start failing
