Tennis - 11
Basketball - 3
Golf - varies, major championships have 2 per group
Baseball - 5-7
Hockey - 3
Football - 6 if you count replay
Poker - 2 (dealer plus floor)
Curling - 1
Soccer - 3
Figure Skating - 8
Snooker - 2

In pool Steve Tipton, Scott Smith or that creepy guy in the Challenge of Champions matches shows up, but only for television. Otherwise there's nobody.

Well, at the IPT KotH there was a ref (shared) and a scorekeeper at each table.

I think the WPC has a ref at each table, and the ref keeps score.

At the recent WorldCup 3-C in Portugal, there was a referee, a scorekeeper, and a shot-clock-keeper on each table.

Helpers cost, either money or organizational time. They need to be trained and sometimes they want to eat between matches. A bad referee is generally agreed to be worse than none at all.
