Proper way to shim pockets

I have shimmed pockets in the pass by gluing two 1/8 shims together but also i have noticed playing on it if you hit the point some times its really dead and i just hate how they play some times. so what is the proper way to do this on my new table? do i use 3/8 shims instead, ect.
