Is it possible to over tighten rails on a valley 7 foot table? I installed new Ridgeback rails today and was just curious if there could be negative effects with hand tightening without the use of a torque wrench...
Ridgeback rails are well designed. Over-tightening, generally, will not cause damage to the subrail. The only real risk that you have is causing damage to the threaded inserts, or pulling them out of the wood.
In other words, if you didn't strip the inserts, or pull them out of the wood, you should be fine.
