Time to re-cover: Please help!!

I have an Olhausen Santa Anna 8ft table that is due to be completely re-covered rails and all. I'm debating on what type of cloth I should use. I think I would like to get something pretty neutral as far as speed is concerned. I have a feeling if I went with Simonis I would have a hard time adjusting to a bar table. Am I wrong in thinking this? Do most of you think it is easier to go from a fast table to a slow table or a slow table to a fast table? I'm not sure if there is such a thing but I want something that is going to challenge me and help me become a better player in the long run. Whatever I choose I want to get a higher end cloth. Durability would be nice but I would be willing to give up some for performance/playability. Thanks!
 
Get the same cloth that's on the bar table and you won't need to adjust for cloth speed.
If you don't want to go speedy (Simonis) then Mercury Ultra is an alternative. Slower then
Simonis but a bit faster than most napped cloths.
 
Have you heard of Mercury Ultra with backing? I'm wondering what the backing is for and if it makes it harder to install (stretch). Should the backing be removed for home use or left on? Thanks!

Backing is thought to make the cloth more durable especially when a place is buzzing with bangers. Backing or not, if you put a tip thru the cloth it's still a hole with or without the backing. Backed cloth can't be stretched. You wouldn't want to pay extra for backed cloth and then remove the backing however the backing has to be peeled off for the rail cloth pieces.

Mercury Ultra is available backed and unbacked.
