how thick should a wrap piece of leather be? like 1 nickle or 2 nickles thick?

Depends on whether you are replacing a wrap with a groove already cut or cutting your own groove. I don't think you would ever want a piece of leather 2 nickels thick ...when you cut the groove for that, you are actually taking out 4 nickels thickness of wood, because the wrap goes all the way around the cue. The thickness of every flat surface doubles when made into a circle.
