Is this possible I have a new butt I want to get worked on and it would be great to convert it to the piloted joint so all my shafts can go on it without issue.

If you remove the screw then go in and create the pilot and put a new screw. Then yes.
I've done this a few times without removing the pin, but it is definitely less work time to pull the pin and bore.
A tiny boring bar can get you right up to the pin
If this question should be taken offline, I'll do that, but what do you seal it with? Your method certainly produces a superior result, I don't polish them for people.I remove the screw so I can seal and polish the cavity.
