Is it Possible to CUT AN OBJECT BALL MORE THAN 90°?

He was shooting from the head spot with the cue ball one balls width to the side of the spot. Do you mean you could cut that shot in either side pocket? The frame at 6:18?
I think so. In my video, I cut it to miss on the over-cut side of the pocket. That same hit on the other side of the OB (with opposite spin) should send it very close to the opposite side with a little pocket cheat (only with a chalk mark at the contact point, of course).

You're a better man than I am Gunga Din.

For the record, the shot at the 8:13 point in the video that i said had an effective cut angle of 95° was actually a larger actual cut angle due to the fullness of the hit. I estimate from the video (using the tangent line of the hit) that the actual cut angle (relative to the line-of-centers direction at CB-OB impact) was likely more than 105°!!!
