Having played in GSBT tournaments before I think you'll need more tables... IIRC AA players play to 11, A to 9, and B to 7. So, that for starters is going to make it longer matches. The last GSBT event I attended play didn't start until around 2pm on the Saturday as sign ups were till noon and...

What game? What would the race be on each side? How long of a time frame do you want the tournament to complete in? What type of money would you expect the tournament to be for (the larger the purse, the slower the matches). Would you be expecting the tournaments to be full of pro and short-stop...

That will first depend on if the place that made them originally finds them. And if not, what the cost would be for someone else to sell them. I wouldn't be surprised if there is a market for these, especially to people who want them for home use like myself.
