I don't have anything set up right now to show you, but one quick thought for you. All camcorders have the female threaded portion on the bottom to accommodate the tripod.
Rather than using a tripod which will get knocked around. Fabricate a "J" type bar which would allow you to mount it to the ceiling joist and even if you have to poke a hole in one ceiling tile, you can clip the camcorder to the "J" bracket that hangs from the ceiling and keep it out of the way of everything.
I like the high angled view from the short rail for 90% of the needs.
Multiple camcorders are always nice ... ( and Adobe Premiere Pro does a great job editing multiple camcorder angles on the same timeline. Oops, thats a whole nother thing.
