The "calibration" you speak of is basically a reduction of the subrail by the 1/8th" for the difference in the size of the cushion and 1/32" for the cloth.
Jack Zimmerman is a great choice if you require this
It is not a short cut, it is giving your customers options and they pick what they want to spend money on. Out of over 50 restorations I have only had 3 people ever spend the money on the recalibration. Jack Zimmerman did the work and they came out awesome.
There is also sometimes the need to replace the subrails because the bottoms of the rails/ jaws of the pockets are so worn from being recovered that they require it. You most likely will want to stay away from the tables like this.
Some people are on a budget. When recalibration costs almost as much as the table, that is out of some peoples budget. 99% of all early gc3's, 1's and 2's out there either have the original cushions or replacement Superspeed or k55 cushions on them.
If your game is so good that you can tell the diamond system is off by 1/8" each rail. you have the ability/skill to adjust to the table.
I have not ever had ONE call/ complaint about using the Superspeed cushions on the older tables.
If you really dont want any of these problems you can: hold out for a late model GC3 or GC4 and the cushions are an exact match.
