I remember reading somewhere that one of the Gold Crown (I - IV) models was significantly more difficult to work with. Harder to put together and harder to get level.

I'm considering picking up a used one, but don't want to run into extra costs getting it set up.

Any opinions on which ones are better?

It's the Gold Crown 1, as they don't have adjustable leg levelers. Any frame leveling with them has to be done between the let pedestal and the frame.

I wouldn't worry about it, no mechanic 'round here would charge extra to setup a GC1 over a GC2 or 3. Like Glen said the only difference is it doesn't have leg levelers but neither do any furniture style tables.

True, and I also agree, in the past, I've never charged extra for a GC1 over GC2-3-4's, some things are just part of the job, like it or not!

GCI, as Glen said, this table levels the stretcher with the baseframe first which results in the baseframe level to the floor. Slates then level to the baseframe as would be the case with GC II or III.
