Drop in league format

I am considering a drop in format, but wondering how to handle if an odd number of players show up? I believe there are some California 14.1 leagues that use the drop in format...what do you do in such a situation?

Drop in format is where there isn't a published schedule of match ups per week. Players "drop in" at designated time /day and sign up to play and are matched up against another. No weekly commitments. At end of season there is a tournament of those that played a required number of matches (usually if the "season" is 12 weeks long, a player must play 8 matches to qualify.

Get contact information from everyone, distribute the season schedule along with the appropriate players contact information. Its up to the players to stick with the weekly schedule and report their weekly scores, but the need to make their makeup matches before the playoffs.

A drop in league format is where you have a day/time established, for a set number of weeks, followed by a tournament. There is no commitment to show up every week. You "drop in" and league operator assigns you to a match with another player. For example, if season is 12 weeks long you have to play in 75% of the weeks to play in the season end tournament. No missed games to make up, no fixed schedule. My question was how does the LO handle the situation where an odd number of players show up on league day to participate.
