It's common to play matches (sets) of a "race" to a number of games. In, for example, a "race to 5," the first player to win five games wins the match. Here in Western Pa, they call it cheese when each player needs to win the deciding match or game.
 
I always assumed the "on the hill" analogy meant that the hard work of getting "on the hill" was done. One more game and the work is done. It's all downhill from there.
