How high should a Diamond light be?

The light should be high enough so you can set up the line on a shot standing at the edge of the table, bend into the shot, shoot it, and raise yourself back up without the light coming close to banging you one the head.
For me on my table, this ended up being a bit over 35 inches off the bed. With the short ceiling height, only have about 4" more I could raise the light.
ETA: if you have room, a bit higher is probably better.
Hang the light at 4 corners with chain and hooks and you can adjust the height to suit your pleasure.

Diamond Billiards recommends 78" from the floor to the bottom of their lights.
made me want to go measure my Diamond light height, which is at 76" from FF.
50" from the playing surface.
50 inch from the playing surface of 30 inches would make it 80 inches at my house.
