How to tell if valley slate is sagging?

I am looking to buy a used valley bar box and everyone says that the main problem with old valleys is that the slate is warped or sagging. Is there a way to tell whether or not the slate is sagging before I buy it? How can I tell if the table just needs to be leveled or if the slate is actually sagging?

Ideally, the table will be level enough to roll balls on it and see if both sides roll into the middle.
