Leveling slates/frames...

Every so often it seems I have to do an excessive amount of shimming between the slate and frame to level all 3 slates with each other. An example would be leveling the frame, then seting the slates on the table and re-checking them, two of them are near perfect, one end piece has to go down, how can that happen without shimming the slate too far off of the frame?

I have read RealKingCobras thread on leveling and I do it pretty much the same way,leveling the frame then the slates but one piece always seems to be way out from the others.

Am I missing some step along the way or are the tops of the tables and the wood liners on the slates that far off from each other?
 
Like any brand furniture style table, ball and claw legs or something similar. I use a 4ft level and 2 2ft levels along with my 3 machinst's levels.

Them are slant body tables, wouldn't suprise me a bit if you measured across the body at the slate seams and found the table isn't the same width from side to side at both seams. The shorter side will also be the high seam side. Or they're wider across the body more at one end than the other, which will cause a low slate at one end of the table.

I have noticed that the tops of the frames are off from each other on alot of furniture style tables. The 2 short sides are level , 1 of the long sides is level but the other long side has to go down on one end, yet the tops are flush to each other,well that can't happen without causing mis-alignment problems with the legs. I always get a perfect level when I am finished but some tables do require stacking shims (2) to get there.
