I drive a Tundra and I like how it drives and I would highly recommend it to anyone. I have not and do not have to drive every other pickup out there to see if any are better. I like the Tundra. Same as with Skippy27 with Penquin rails.
Obviously you should find local table mechanics and ask them directly for their prices to get your best answer and if you don't know any find any local places with tables and ask the owner which mechanic he uses and you will eventually find a few that make house calls.
As for me I had a table installed and after about 10 years finally got it set up the right way. I play out of Drexeline as of the last few years and got the guy that does all the tables there to come and redo my table. He charged 400$ give or take to put Simonis on level the table and also shim up the pockets close to double or triple shimmed. I'm completely satisfied and wish I'd done this 10 years ago because the table was originally installed with a nap type cloth which obviously plays different not to mention the constant need to brush those little pieces away.
If the table is used do yourself a favor and get the rails redone. I wish someone would of mentioned it to me because I never considered it and now my table plays and rolls perfectly but I have some dead spots along the rails. So now I'm forced to play double time to wear that cloth so I can justify redoing again lol next time I'm 100% adding new rails to the job. Hope this helps

Clearly he has played and installed both and knows the + and -'s of both and can offer up some additional insight.
I did look into Ridgebacks and they do have the newer 5 bolt system that the Valley uses so that would be a + in my book as I don't believe the Penguins have made that transition yet.
However, I couldn't find a place that has the Ridgebacks precovered for you so that would be a -.
Nevermind...looks like you have to have a paid photobucket account for 3rd party hosting...anyway, I decided to go with the championship worsted (Tour Edition) in tournament green. I almost went with the blue, but decided for the more classic look of the green.
I got quotes from 4 different mechanics...only one of them recommended Simonis. I am very happy with how the table plays with new aramith balls. Ended up costing $415 from AAA Billiards in Murfreesboro, Tn. Great guys with some cool stories of running with Johnny Archer, Keith Mcready, and others around Nashville many moons ago. Overall a good experience and I would recommend them to anyone.
