if all three slates should be leveled first? Also, won't the slate be difficult to separate again and won't pieces of slate chip off and stick to each other?? I can see how gluing could help a crowned slate, but do you glue all the way across the the slate line or just at a few spots??

I glue in four spots between each seam. I use card stock as a sort of wick which sucks the glue down. When it comes time to move the table all you have to do is lift from the end and the card stock will rip away. No chips or cracks.
 
When you go to dismantle the slates you can score the slate seam with a razor knife and or use a screwdriver flathead to wedge between the slates to split the seam. Old tables its a bad habit to just lift up on the slate if it has pins you blow out the seams. If you do lift up on the slates just a little bit an inch or so just to check under the slates it's better to slide apart so use cation if you left up.
