How would you set up the tables?
Slow cloth to force strong strokes? Fast cloth for touch?
Tight pockets for accuracy? Large pocket to allow "cheating the pocket" for

Like golf, changing conditions. Not always perfect. That used to be the most impressive thing about the road player. They beat players on their own tables. The all around player who plays all games on all equipment. That is a pool player.

Sounds good, but 4.25'' pockets are to tight for good consistent practice, great for practicing shot making, not so great for working on position play where cheating the pocket is necessary.

A couple friends who are pros play on a diamond with 4" pockets. Its the same table I play on and for a very good reason. It forces me to play on the right side of the ball a tight position or I miss. Its a helluva table for one pocket but a really tough rotation table.
I think that if you can play position on a tight table and pocket balls consistently, then cheating pockets on a table with bigger pockets should pose no issue.

Put them on the table they will most compete on and make them play until their fingers bleed. Give them band aids and make them play some more.
Don't scrimp on equipment. Get them a Diamond Blue Label 9 footer (Pro or ProAm) and a decent set of high end balls. Pro cut pockets (4.5") or tighten them slightly. They will know how to reliably run racks when the equipment works the way it's supposed to...then they can always adjust down to dirty/aged balls, bigger pockets, slower cloth, smaller spaces. Develop them on perfect conditions, then expose them to worse ones. The other way around teaches bad habits, over-stroking shots, etc.
