How much side wall do you like to start with on a new tip, and how much side wall do you have left when you replace it?
 
The installation size has been argued for as long as there have been leather tips I would bet....

After the Deflection tests done by Dr. Dave on tips and install heights it seems like it is a personal preference...

I always advise people to install the Ki-Techs full height because cutting them down just shortens their life... As far as when to replace a tip...

Sidewall shorter than a nickle is when you start having to worry about your ferrule... The tip is likely no longer what you purchased well before you hit that mark unless you get very lucky on a hard grade layered or non-layered.....

The personal preference thing is hard to fade.. I have several customers that have to have a certain look... Has to be a certain height and a certain color or the shots look funny... I don't get it but I am looking at the balls and not my tip and ferrule when I am playing... Shane may have a preference tho since I know he uses the edge of histip/ferrule for aiming...

I chop about 1/4 of the top off the tip and shape it from there.
I play it down to the nub though.... you know, when you start hearing the ferrule when you miscue.

I have tips installed at full height. For the past few years, I have been using hard layered tips and do not anticipate much benefit in playability by having them cut down. In the past, my single layer tips were replaced when they got to a dime thickness. Most of my ferrules are ivory and have fiber pads, so I have not worried about the ferrules. Hard layered tips last a long time for me. I have not worn one down enough to force a decision to change. Delamination became a problem before getting that close to the ferrule.
 
I typically do not have mine cut down at all. It's going to wear down enough with play and shaping etc. When do replace it is generally based on how it feels to me. I let them get fairly then because I tend to think tips play better right before they need replaced. When it finally turns a corner I can always tell though and the tip starts to feel and play awful. This is usually before any threat to the ferrule.
 
They tested and it makes no difference really, unless the tip is so thin you're at risk of miscue.
Overthinking this kind of thing will hurt your game.
Just use the tip full size out of the box, and replace it when it starts to look scary thin.

I do my own tips so I can do what I want, I start with a tip about where most people are getting ready to replace it. I like it low, I don't really care about how often I have to replace it.
