I don’t know that I agree with the conclusion.

The MC is exciting because it’s US vs Europe. It’s been races to 5 for as long as I can remember. Is there any evidence of that it would be less interesting to viewers if it was races to 7 or 8?

I think it was made short races to begin with because Europe was so far behind the US that short races were their only shot. Ironically you could say the reverse is true now, but I’m not sure that’s right - SVB, Gorst and Bergman all seem to be slower starters who warm up into a match.

Ryder cup they play a full 18 holes per match. Davis Cup is the usual 2 of 3 sets.

I don’t expect they will change the MC or Reyes Cup, but it’s also not deciding a world championship.
There is ample evidence that the MC races work, despite the lopsided results year after year. Most views of any pool tourney by far.
 
... PS Actually, they tried race to six at the 2011 Mosconi Cup at the MGM Grand. I didn't enjoy it as much, and the format was abandoned the next year. Race to five has been the format ever since.
2011 is far from the only time the Mosconi Cup has used races other than to 5:

1994-1997 -- best 2 out of 3 races to 3, but you had to win by 2 games, and that was ended (capped) when someone got to 5. So the winning scores for the races were 3-0, 3-1, 4-2, 5-3, or 5-4. And to make it even a bit more odd, in 1995 the last match was just one race, and in 1996 the last 4 matches were just one race (time problems perhaps).​

Yes, I didn't look it up, but 2011 WAS MY first Mosconi attended and I recall the switch back to race to five a year later. Since then, I have attended most of the Mosconi Cups and the norm is race to five. It remains my view that fans enjoy the shorter races more.
