but (no pun intended)
what is the difference in size of a "standard butt vs a "slim butt??)
whats the difference in feel and playability if any??

what do you find most of your customers are asking for??

Most fall around 1.250" .

All things being equal, the fatter the bottom the stiffer it should hit.
Problem is, all things are not equal.
Not all butts have a straight taper ( one angle ).
Some have two, 3 or more or a parabolic taper.
 
Standard is 1.250 but I am cuting mine to 1.125.
Does not seem like much of a difference but the shooters can feel it and I get good feedback.
I was using a I" screw in bumper and burying the bumper a little bit but the walls of the cue are only .0625 thick and that was a mistake. Had to change bumpers to avoid splitting the butt cap when the shooter whacks the end of the cue after missing a shot. The bumper compresses and forces it's energy outward, thereby cracking the buttcap.
Alas, you lean the hard way.
 
I played with one that's resting in a case somewhere that's .800 and 1.215
