Gray comes in many colors, would think a Silver Gray would look classy.
Are you going to use grey chalk?
Its CLOTH. IMO only interior decorators like gray cloth.
I prefer tournament blue but I think grey would look good. Karl Boyes has grey on his table on youtube and it looks good to me. I have no experience with grey so I can’t answer your other questions.
It's not at the top of the list of colors I wouldn't use, but it is on the list somewhere below black, red, tan and purple.

Silver Gray is great color, think master make gray chalk.
Rule #1 is make sure it is a brand name, quality cloth. Next, gray will give good contrast for most all ball sets. If YOU enjoy it and it looks good with your decor / space, please enjoy. Don't worry about what we all think. My table is about the color of a confederate soldier's uniform. I have had it for just over 20 years now, and it is still playing great and looks pretty good for its age. It was Mali cloth.
When I bought our table I let my wife pick the cloth. It’s a blue-gray. Had a real junky light at first and it was hard to pick up the edge of the 8 ball on a long shot. Better light solved that issue. I think I have her talked into a tournament blue or tan when it gets changed out.
