To date (approaching one year), I have seen no ill effects for my set-up other than during winter, my warm hands cause a small amount of condensation on the balls while racking... but I believe it quickly evaporates before I break 'em up.
And there's no need for A/C here in Seattle. It rarely gets above 80 degrees... and when it does, the humidity is very tolerable.
Aside from the minor condensation on the balls during the winter, what I also notice is the speed of the table changes with the temperature and the amount of moisture in the air. As you would expect, it's faster in the summer on a warm day... but that's no biggee as adjusting to a table's conditions is something every good pool player has to do anyway, right?

I keep it covered with a heavy vinyl cover when not in use. I put moth balls inside the box and occasionally spray insecticide in there too. Protected from the sun, but not the humidity.
Here it was, covered by the vinyl cover and a tarp when Katrina hit in its fury, and 8 inches of the fiberglass and aluminum legs were covered by flood water. The formica sides and plywood bottom were unaffected.
This is not a Brunswick or a Diamond, but the table plays fine. The Mali cloth is slow, but in a way that compensates for the smaller size. In really cold weather the cushions get a little dead, but not too bad.
The worst complaint I have is mosquitoes in the summer, but right now (50-70 degrees), it is delightful.
