Don't do that. Have them play in groups of four -- everyone plays everybody else in their group -- and then the top player in each group advances to single elimination. Far fewer rounds and you can make the individual matches longer. Everybody gets at least three matches.
 
Robert Tabor in Texas runs triple elimination brackets all the time for all sizes. I'll PM you his contact into.
 
That will be a long freakin' tournament... It could be good for a race to 1, maybe. Round robin, groups of 4 is probably the easiest way to reduce the field to 8.

Hey Gary,

That's the way that they do it at Rascal's in Spartanburg (or did). Tournament is 1 game 8 ball....... APA 7s get 2 losses. I think 4, 5, and 6 skill levels get 3 losses. And 2 and 3 skill levels get 4 losses. It does take a long time.
