which countersink 1 flute or multi

looking to get a 60 degre countersink which is better for wood 1 flute or multi flute

I would say one. Multi-flute will not have sufficient clearance of debris. It works. I have done it. Better yet, try a 60 degree v-groove router bit for sign making. You'll never think of using a countersink again.
 
What are you looking to do with the bit? I use a single indexable cutter for creating a countersink for my bumpers, center drills for creating a hole to drill before boreing. Those are 2 flute and double ended.

You might want to get an 82 degree counter sink as that is most likely the angle of the bolt head. Either one flute or multiple flute works fine. You just have to find the right speed to eliminate the chatter.

Set your compound on your lathe at 41 and bore 82
Set your compound on your lathe at 30 and bore 60
makes a perfect countersink
