I've heard that too but it depends on your source. I choose to use Einstein because nobody knows who Escher is. I've seen it quoted by both.

That's probably the strangest logic I've heard in a long time. Roughly analogous to, "let's forget the courtesy of proper attribution, and choose instead the path of media airplay 'sexiness and sensationalism'." Don't we have enough of that crap in today's society?
The quote DID come from M.C. Escher. If one types that exact quote in any search engine, all the hits I see come up for Escher -- a *well known* graphic artist who's renowned for those head-scratching works of "puzzle art" (like the staircase that connects to itself at the bottom & top). I stopped going through about 4 pages of Google hits on this quote, and not a single one up to the point I stopped says it came from Einstein -- all from Escher.
