Watching MOJOE's videos of his match with Efren, I realized I really don't know what all is going on.

First to 5 balls?
You can shoot any ball?
Can you hit a rail(kick) first?
Is defense allowed?
Behind the line after a scratch?
Saw balls being spotted a lot. When does that happen?

Any other info would be greatly appreciated as well.

You can shoot any ball and defense is allowed. The rest of your questions have already been answered on the DCC website.

You can shoot any ball? yes

Can you hit a rail(kick) first? no single rail kick shots...I believe you can kick three or more rails if you call it. And the rails which are attached to the pocket you are trying to make the ball in are not considered a 'rail' in any shot.

Is defense allowed? yes

Behind the line after a scratch? yes...only a cue ball scratch or cue ball off the table...any other foul, you shoot from where the cue ball lies but the fouler owes a ball

Saw balls being spotted a lot. When does that happen? every foul is penalized by a one ball spot from your till. If you make the called bank and scratch, you would spot the ball made plus one for the penalty. Any ball made in the wrong pocket, double kissed by the cueball or any combination or kiss off another ball gets spotted also.

What if you scratch right off the bat ? does that mean you go -1? i always wanted to find out about that i like to play 9 ball banks.

Kick shot aren't allowed period since safeties are allowed. They only allow the kicks in the ring game.
