Assistance with a table in the garage

That is twice the recommended fall for a garage. It will be much less noticeable if you can put the long rails parallel to the garage door.

I can, and after you said that, I ran out and got my plumb and measured the correct way from a beam. It's like 1.25" over 10'

The old drawing showed 2", but the builder of this house should be institutionalized. So many weird things going on. Drawings all wrong. Pain in the butt.
 
Depending on how wide your garage is it may be possible to fit the table in and also one car. As long as the table is about five feet from one side wall that's all you need. The table doesn't have to be in the middle of the room. Mine isn't. The benefit is I can still park a car in the garage. Plus, the garage door opener is in the middle so it would have caused problems getting a light fixture directly over the table if it was in the center. The other advantage to having the table off center is that it allows plenty of room on the one side to accommodate spectators.

I would also orientate the table so you are breaking towards the head wall and not towards the garage door. That way if you are ever playing with the garage door open or cracked, a ball that goes overboard on the break probably won't end up bouncing around on the concrete or asphalt outside.

I started with the rails, I am refinishing the table. I don't like the worn out gummy Minwax-style crap that Brunswick used, and the walnut underneath is incredible.

The rails and cloth were upgraded one time. Master Fast, like new. The rubber is very responsive, no signs of dry rot. I'm probably going to sell them, they can easily be used on a table now. I tested them out before teardown, very nice rails.

The original tack holes for the cloth were supplanted by one set of staples.

Don't know what kind of cushions you're planning on installing, but those Master K66 cushions are the wrong profile for a Brunswick pool table....just saying.
