There is much variation, but yes many furniture tables use hardwood.
The rails and frame of GCs are Poplar(with a laminate top for the rails,
The aprons, at least the earlier ones were Sycamore.
Poplar has been widely used in tables for over 100 years. In the era of what are now
antiques, it was usually veneered with Oak, Mahogany, etc.

I don't understand the importance of the question as hardwood, or the lack of, has nothing to do with the overall design of a pool table, other than some tables burn hotter than others....LOL
