I thought Gino's East is a bit overrated myself...I actually think Uno's (funny, I never had Uno's until after I left Chicago) is better.
What I used to love while I lived down there was Connie's. Don't know if they're still around.
All those chains are OK (especially Giordano's for deep dish), but now some individual stores are opening up that serve uncooked "gourmet" pizzas that they assemble to your order and you take home and cook yourself (not frozen). They're the nuts.
