There was a little place in Texas, that did just what you're saying, 'cept the didn't server alcohol. (had not been able to get their license yet), but had some food, and an dance floor.
It's not some place I would have normally gone to, but there was a tournament there that weekend. (Some BCA event) There was a scotch doubles event on Friday, and then singles for both men and women on Friday and Saturday. The turn out was very good. They had 9 7' diamond smart tables.
When the tournament stopped for the night (around 8ish on Saturday, the place was packed with the locals. Mostly bangers that were there to have fun.
We stayed there most of the night (midnight or so) and it never let up. There wasn't an empty table in the room. People were able to bring in their own alcohol, and the owners would supply the sodas for a reasonable price.
Tables were a dollar a game. With bangers, you might get 3 dollars an hour out of a table on average (20 minute games) 3 X 9 = 27, 27 X 9 = 243. That's not to say they may not have done more, but that's the conservative numbers.
I have no idea what the week nights were like.
So... if you're only going to have 7 tables, it's going to take a lot to pay those off. You will probably get people to come in that are not players, but those will be the people that are there to have fun, and drink. That's where you'll make most of your money. To supplement that, hold small weekly tournaments on the weekends, and then a big monthly one that's a 40 or 50 dollar entry. Advertise is well here on AZ, and you will bring in players.
