Things to look out for when tightening pockets?

I've been toying with the idea of tightening the pockets of my pool table for a while now and now my mind is pretty set on it.

The current pockets on my table are HUGE, like 2 balls and some...my only dilemma is that I'm in China, so as much as i would like to get a good mechanic from this forum to help me out i can only resort to getting advice in words.

The last mechanic that assembled my table did a decent job but he won't be my guy in tightening them pockets. I'm looking for recommendations from friends here however i'd like some professional advice from table mechanics in the states. Pocket tightening isn't that common around here from what i know so besides them doing their job i'll like to be sure they are doing it right.

I welcome all good advice on what i should look out for or specifically instruct the mechanic to do?

The basics -
Start by adding to the subrail - as shown. Use a thicker piece so you can
cut down to the angle and width you want. Some of the other guys here
can chime in with a choice of pocket and down angles you could use.
Once you have both rail ends done install a fresh cushion set and facings.
Cover and install.

I bet that table plays tougher than it looks with those deep shelves. Notice the shallow shelves on mine:

I completely agree with that. Mine has those same deep shelves and even though my pockets are about the width of a valley its very easy to rattle a ball and have it kick back out or have one stop so deep in the pocket its beyond the cushions, if you try a rail first shot the cue ball wont touch it.
 
No doubt the deeper pocket spits balls out but because of the large opening i do tend to get sloppy with my shots..it does permit quite some "cheating" of the pockets and i'm not discipline enough not to...

Anyway i received info from someone that Brunswick Centennial Balls are somewhat smaller than Aramith Tourny Balls, is that true? I mean it sounds off, but i just want to verify since i only have Centennial balls at home and i don't wanna bring one out to compare in a pool ball?

No. Both ball sets are 2 1/4" diameter.
