I think people may be reading too much into the fact that pool isn't televised as much as it was 10, 20 or even 30 years or more ago. It's not so much that pool was wildly popular back then and isn't now. It's more about how the TV business has changed.
30 years ago you had Wide World of Sports...if you wanted to watch sports, that was your choice. The other 2 networks were playing a rerun of the movie Heidi and a Here's Lucy episode. You watched it because it was on. You saw a lot of pool but you also saw a lot of log rolling, ski jumping, curling, and waterskiing. I think it was mostly that they had you by the short hairs and showed whatever was cheapest to produce and air that wouldn't cause you to turn it off.
Today is a very different business environment and pool just doesn't fit the formula that well. Pool didn't change, the TV business changed.
